INGREDIENTS

  • 200g uncooked Eatalian Express star- shaped mixed vege pasta
  • 1 tbsp. butter
  • 1 egg, beaten
  • 1/2 cup milk
  • 100g cream cheese
  • 150g shredded Cheddar Cheese
  • 150g Mozarella Cheese
  • Salt to taste

DIRECTIONS

  1. Preheat the oven to 170°c. Grease a muffin tin with butter. In a large pot of boiling water, cooked star- shaped pasta until just tender, 5 minutes. Drain and transfer to a large bowl.
  2. To bowl, add salt, butter and egg and stir until butter is melted and egg is thoroughly coating pasta.
  3. Blend milk and cream cheese then pour to pasta and stir until combined. Reserve 1/4 of Cheddar & Mozarella cheese for muffin toppings and stir the remaining Cheddar and Mozzarella cheese into the pasta.
  4. Spoon into the prepared muffin tin. Sprinkle the reserved cheese on top.
  5. Bake until the cups feel firm and cheese is golden, 30 minutes. Let cool in muffin tin for 10 minutes, then run a knife along the edge of each to loosen.
